Pickled Brain
Four lobes, four delicious lovely lobes of throbbing grey matter
So much stiffer than one would imagine
Coming apart like a vegetable, like cauliflower
But still soft and pungent and sweet as a tomato.
Next comes the thalamus, sweet and sour
A firm little bit with a soft inside
Then the squishy, bitter pituitary
(Which can be flavored with lemon)
Now the corpus callosum
Chewy and indigestible
But strangely buttery
Finally the medulla, stringy
Tending to stick in the teeth
So many tasty bits and tender pieces
Meninges that melt in the mouth
Like cotton candy
The optic nerve
Which slurps like spaghetti
Finished
